Leftover Thanksgiving Mashed Potato Pancakes - Gluten/Sugar Free

Sorry its been a long while. I have been so busy! Anywho, heres a recipe for delicious leftover mashed potato pancakes.

Ingredients:
1.5 c mashed potatoes
1/4 c gluten free flour - I used potato starch flour, but Im sure any flour will do
2 tsp water
1 egg, beaten
1/3 onion, chopped
1/3 red bell pepper (but you can get creative with your vegetable choices)
Olive oil
Crushed black pepper to taste

Directions:
Combine mashed potatoes, flour, water, egg, onion, & pepper in bowl. Mix well until it looks like a mushy pancake mix. Oil skillet and turn flame on medium. Spoon desired amount into skillet. I like to make my pancakes smaller, so they get kinda crunchy on the ends. Cook until bottom side is slightly browned. Flip and repeat. Once pancakes are cooked, transfer onto a paper towl to let the excess oil drain out, and serve!
I put some leftover cranberry sauce on top of mine, but any delicious (but healthy) fruity or cheesy topping will do! Fresh applesauce is another personal favorite with potato pancakes. Enjoy!!

Poached eggs without a Poacher! -Lola

Poaching eggs are one of the healthiest way to make them. Not to mention they are absolutely delicious! I never really would make poached eggs because I thought this whole time I needed a poacher, but I decided to give it a try without a poacher! Honestly, I dont even know what an egg poacher looks like. For all of you who also dont know -Here's a picture. So on to the egg poaching!
Ingredients:
*Eggs
*Apple Cider Vinegar
*Sea Salt
*A medium/large deep skillet w lid
*Little bowls/cups for eggs
Step one:
Get a medium to large skillet and fill it with 2-3 inches of water. Make sure your skillet has either a lid, or something else you can use for a lid. Bring the water to a boil. While you're waiting for the water to boil, crack your eggs into a little cup or bowl. I used a Chinese rice bowl for each egg.
Step two:
 Once the water is beginning to boil, add some sea salt and about a teaspoon of apple cider vinegar to the boiling mixture. The Apple cider vinegar keeps the egg together, and is a healthy little additive as well. 
Step three:
Grab your egg cups and one at a time, lower the lip of the bowl into the water about and inch, and let the egg slide out into the water. Repeat with other eggs quickly!! Immediately cover the skillet and turn heat off completely. Set a timer, or watch your clock. I cook my eggs for 3 minutes so the inside is slightly firm but still gooey. You can change the time to 2 minutes or 4 minutes depending how cooked you like you yolk. 
Step four:
After your desired amount of poaching time, grab a spoon with slits or holes in it. Grab each egg one by one, let the water drip off the egg, and place it on your gluten free toast, english muffin, or bagel! I didn't use any type of bread, so I just ate it with bacon and steamed broccoli and spinach. 
Done and done!! Delicious, healthy poached eggs!

Lola - Candida Detox day one!

So I put myself on a candida detox for a month. Its not a liquid detox, so its actually much easier to do than your regular cayenne, lemon yada yada detox. I personally believe that the body should never go through such a detox unless you are going to be laying around the house for a week and a half letting your body REALLY detox. People who try to do juice fasts, while working out/doing sports/etc. ends up really fatiguing your body rather than recharging. I am all about balance.
Although I already eat pretty well (gluten dairy and for the most part sugar free), I still seem to have problems with my skin, and digestion along with other things that come and go. Ive also been getting headaches lately that could be related. If you want to read more about candida overgrowth in the body, you can check out - Holistic Help - Candida.
Yesterday, I started my cleanse by taking a Yeast - Cleanse herbal supplement with pau'darco, grapefruit seed extract, caprylic acid, and a couple other things.
For breakfast Cheese Louise made me a vegetable omelette with sauteed rainbow chard, onions and fresh garlic. She put the garlic in the omlette raw to keep the antifungal/antibacterial properties alive instead of cooking them away. I swear by garlic. Its magic. We also made a large batch of organic short grain brown rice to eat throughout the day since its something thats not restricted by this diet.
For lunch I heated up some more brown rice, and sauteed some more veggies - Kale, onions, chard, collard greens, fresh unrefined olive oil and again fresh garlic on top. I have been seasoning almost everything with either natural herbs, or Bragg's Liquid Amino Acids.
I snacked throughout the day on some raw almonds, and finished off by making a seafood rice pasta which consisted of calamari, shrimp and scallops. I threw some onions and raw garlic in there along with some organic fresh basil and organic pasta sauce. Unfortunately, eating this meal made me feel really tired and heavy which wasn't so good before derby practice. I'm beginning to think it was from the rice pasta. Ill remember in the future not to eat something so heavy only a few hours before practice. I actually know not to do that but clearly forgot!
During practice I felt fatigued and slow. My mind also felt pretty foggy. I couldn't seem to focus clearly at all. I'm hoping with this diet, I can have a clear mind, along with no stomach cramps, or itchy skin. Having to worry about the burning in your stomach while trying to scrimmage is not easy.
When I got home I blended up a raw oatmeal shake. I added raw oats, unsweetened soy milk, some ice, cinnamon, and a drop or 2 of stevia. The flavor was delicious, although I accidentally added a bit too much ice to the mixture. Next time I will blend everything before adding ice, then slowly add some in cube by cube. The oatmeal thickens it up already so I think the ice is just there to keep it cold and just a teeny bit thicker.
Before bed I took another 3 yeast cleanse pills and passed out almost instantly.
I slept like a rock. My body needed it. I woke up and took my 3 yeast cleanse pills and headed over to the YMCA with Cheese and worked out in a gym for the first time in over a year! I still felt pretty fatigued, so I took it easy. I feel like my body is already beginning to clean itself out which could be the reason for all of this fatigue. I know that with any cleanse or new diet, your body goes from worse to much much better. We will see how I feel at derby practice tonight.
